Indian style mango pudding


This is a variety dish which can be prepared very easily . It is also very healthy and refreshing to store in your refrigerator during hot summer days. You can also make it more presentable by garnish and serve to guests , they will be happy to have it any time of the day. Needless to say, what makes it more favorite is the main ingredient as the name suggests- mango. Will there be any Indian who does not love mangoes !!! Here I have mixed up few regional recipes to have a different taste and yeah it came out good. The ones I mixed is first the typical Mango kheer that the Mangalorians make and the mango pudding recipes which I found in another site. I had also seen recipes using gelatin to give it the pudding consistency but I thought why not substitute sago instead and it worked really good. Only thing is you need to be little patient to work with sago- its an easy guy only when you learn to know how handle it .For this I have used the mango pulp which is available in cans and the coconut milk which is also available in can- so the main time consuming and tedious processes are done with it.

 Serves 6

INGREDIENTS:
  • Mango pulp- 2 cups
  • Coconut milk- 2 cups
    Jaggery - one big ball
  • Cardamom powder- 1 tablespoon
  • Sago- 1/4 cup 
  • Nuts or fruits to garnish
How to Prepare:
Step 1: Wash the sago to remove the starch and soak it in water for 3 hours. Then drain the water off and keep aside. Boil 8 cups water till it reaches the bubbling stage. Then add the sago to it and stir so that it does not go and stick to the bottom. Keep stirring to cook sago to the transparents pearl stage. Transfer the pearls to a collander to drain excess water and wash it in cool water once to again separate the pearls and remove the excess starch. Keep it aside.
Step 2: Melt the jaggery to thread consistency.

 

Step 2: Add the coconut milk to it and mix well.

Step 3: Add the mango pulp and mix well. Add cooked sago and mix well.


Step 4: switch off heat and garnish with nuts.

Step 5: Serve hot or chilled. It tastes better when chilled as the sago also will give it a smooth custard /pudding consistency. It will be pleasant experience to also bite the pearls in between.
