Gobi Manchurian

This dish can be made as a starter and also as a side dish for rice or rotis. It is a preparation of cauliflower florets in a sauce mix .

INGREDIENTS:
  • One small cauliflower- Seperate the florets and soak in warm salt water for 15 minutes. Drain it well and keep aside. 
  • 3 medium sized onions- Finely chopped
  • 2 green chillies-Finely chopped
  • 3 pods-Garlic
  • 1 tablespoon-Red chilly sauce
  • 1 tablespoons- Soya  sauce
  • 2 tablespoons-tomato sauce
  • 3 tablespoons- Vinegar
  • 2 tablespoons- cornstarch
  • 1 cup-Maida
  • 1/4 tablespoon pepper powder
  • 3 tablespoons - Spring onions
  • Salt as needed
Serves four Guests

How to prepare:
Step 1: Preparation of batter
Mix maida , cornstarch, a pinch of salt to taste, pepper powder and water to make a batter thick enough to coat the florets. Dip the florets in it for 15 minutes.

Step2: Deep fry the florets
Heat oil in a kadai and deep fry the florets till golden brown. Remove it from oil and pat dry with tissue paper. Keep aside.

Step 3: Gravy preparation
Heat oil in a pan, add the finely chopped onions and saute till it turns brown. Add finely chopped green chillies and saute till it is cooked. Add finely chopped garlic and saute till it is done. Add the red chilly sauce, soya sauce and tomato sauce and mix well. Add required salt .Add the vinegar and mix well. Mix 2 tablespoons cornstarch with 4 tablespoon water and add to the gravy. Mix well till the gravy thickens.

Step 4: Serving.
When the gravy is done , add the fried cauliflower florets and mix well with the gravy. Garnish with spring onions. Serve hot with rice or rotis.
