Spinach thoran


Spinach is very nutritious and hence is included in most salads in USA. Here we get chopped spinach as well as fresh ones in a salad packet. Its in fact cleaned and ready to eat . When in India I used to love the Red spinach or Cheera which we get there. The cleaning of it and chopping is a tedious task though and after cooking we start wondering where all the effort went as the leaves will all shrink and final result will be just in a small serve ware bowl. But still for its taste and the nutritive value we are ready to take the effort each time .After reaching here I was missing the Cheera and started experimenting on the Spinach.Though in India I was not a very great fan of green spinach (Pacha cheera) here as there are no other options I buy this but it tastes good and can include in salads too which sometimes form our dinner. You can make this with or without coconut but I need  a tinge of coconut taste . You can cook this in no time at all ( chopping time not included)
as it cooks really fast. 

Serves 4

INGREDIENTS:
  • Spinach -one packet
  • Onion- 1 small chopped fine
  • Mustard seeds- 1 tablespoon
  • Uradh dal (Uzhunnu) - 1/4 tablespoon
  • Turmeric powder- 1/2 tablespoon
  • Red chilly powder- 2 tablespoons
  • Salt as needed
    Fresh grated coconut - 1/4 cup

How to Prepare:

Step 1: Wash the spinach in fresh cold water and chop it into fine pieces. 

Step 2: Heat oil in a kadai , splutter mustard seeds and uradh dal . Add the chopped onions and saute till it turns transparent and light brown. Add the chopped spinach and mix well. Add salt , turmeric powder , red chilly powder and mix well. 


Step 3: Add the grated coconut above and stir well.


Step 4: Mix well and cook it without adding water. Cook till the water oozing out of the spinach is absorbed. The mix should be dry when fully cooked.


Step 5: Serve hot
