Rice Kheer (Paalpayasam)

This is a very popular dessert in Kerala . It is served for all the wedding functions and other festive occasions. A very simple and sweet dish which will make anyone want more and more , thats Paalpayasam. As the name indicates it is made of milk and rice.My hubby is a great fan of payasam and Paalpayasam is his favourite.

Serves six

INGREDIENTS:
  • Basmati rice /Biriyani rice- 1 cup
  • Milk -2 cups
  • Sugar- 2 cups or according to taste ( Since I use granulated sugar more quantity is needed for taste)
  • Ghee - 1 tablespoon for final garnishing
  • Water - 2 cups
  • Cashews and Raisins- for garnishing

How to Prepare:
Step 1: Boil 1 cup water and 1 cup milk in a pressure cooker. When it is in bubbling stage add washed and soaked rice and cook for one whistle. When rice is cooked well (Not in mashed level, it should retain its shape) Add sugar to the required level. Mix and cook well adding another 1/2 cup milk and 1/2 cup water. When the kheer is almost done add the remaining milk and sugar and simmer.

Step 2: Garnishing
In a pan heat ghee , saute cashews and raisins ..Add to the prepared kheer.
