Aloo gobi Mattar


This is a North Indian flavor dish using Cauliflower, Potatoes and Green peas. It can be made as thick dish with no gravy at all or as a light gravy dish .If it is made thick the cauliflower florets, Potatoes and Green peas should be all seen distinct whereas if it is made as gravy dish then all three ingredients can be cooked to a mashed level so that the gravy will have the unique flavor of all the veggies combined. I like the latter and have given its recipe here. A very healthy, tasty and easy to make dish which goes well with rice or chappathys.




INGREDIENTS:
  • Cauliflower -1
  • Potatoes - 1 medium
  • Green peas- 1/2 cup
  • Onion- 1 medium -sliced thin and lengthwise
  • Tomatoes- 1 medium cubed
  • Capsicum - 1 medium cubed
  • Ginger garlic paste - 2 tablespoons
  • Turmeric powder- 1/2 tablespoon
  • Red chilly powder - 1 tablespoon
  • Coriander powder - 2 tablespoons
  • Garam masala - 1 tablespoon
  • Salt as needed
  • Coriander leaves- to garnish

How to Prepare:

Step 1: Cut the cauliflower and seperate the florets, soak it in salted warm water for 15 minutes.

Step 2: Heat oil in a cooker, add onions saute till transparent and light brown. Add ginger garlic paste and saute till the raw smell leaves. Add the capsicum and saute till done. Add tomatoes and saute well. Add the cauliflower, potatoes and green peas and mix well. Add turmeric powder, red chilly powder , coriander powder , garam masala and required salt. Add two one and half cup water and cook for one whistle. 

Step 3: Garnish with coriander leaves and serve hot with Basmati rice or with chappathys or parathas.
