Tricolor sandwich


This is one of my favorite evening snack. It is also one of my first special dishes when I started cooking . Everyone in the family used to love it to have with tea on weekend evenings. 
It is simple to prepare and also  very presentable,in case you have unexpected guests for tea. The combination is mint chutney, tomato chutney and butter on the bread slices. You can substitute with a  less spicy combo also for the kids like sweet sauce or jam  Kids will love it too .

Serves two 

INGREDIENTS:
  • White bread slices - 6
  • Pudhina chutney (mint chutney) - 1/2 cup
  • Tomato chutney - 1/4 cup ( you can substitute with a fruit jam if you like sweet  taste or you can use tomato sauce if that is your choice )
  • Butter/cheese spread- 5 tablespoons

How to prepare:

Step 1: Mint chutney 
Grind together 1/4 cup grated coconut, 1 teaspoon finely chopped ginger, 2 finely chopped green chillies, 2 tablespoons chopped mint leaves , 2 tablespoons curd/ 1 tablespoon lime juice, and make it  to a smooth paste. 

Tomato chutney: Heat oil , add 1 tablespoon ginger-garlic paste and saute well. Add 1 cup finely chopped onions and saute till it becomes brown, add 1/2 cup finely chopped tomatoes and saute till it is cooked well. Add turmeric powder, red chilly powder, coriander powder (1 tablespoon each) and salt as needed. When it is fully cooked allow it to cool .Then  grind it to a smooth paste adding 2 tablespoons water . (It should not be too watery but should have the spread consistency)

Step 2:  Making Sandwiches
Remove the edges of the bread slices . Take three slices for making one sandwich. On one slice spread butter on both sides , this is the center piece. On the second slice spread tomato chutney on one side, this is the first piece. On the third slice spread mint chutney, this is the bottom most piece. Layer the pieces - the one with mint  chutney at the bottom , the one with butter on both sides in the middle and the one with tomato  chutney on the top. Pass a toothpick through the center of all the pieces and garnish using mint leaves and cherry tomatoes.(I have used grapes in the pic)

So doesnt it give a tricolor patriotic feel ?
