Kootu curry


This is an authentic Sadhya item of Kerala. A typical Vegetarian meal is not complete without this dish. It is very easy to prepare and quick one too.  You can make it more tasty by adding more coconut than mentioned. As here the availability of our Indian coconut is dependent on Indian grocery stores, we manage with less coconut and make ourselves satisfied with the taste.


Serves 4 

INGREDIENTS:
  • Raw Plantain - 1 big chopped to cubes
  • Kaala channa (Kadala) - 1/4 cup (Soaked in warm water overnight )
  • Yam/Suran/Chena - 1/4 cup chopped to cubes
  • Turmeric powder - 1/4 tablespoon
  • Red chilly powder - 1/4 tablespoon
  • Grated Coconut - 1/4 cup
  • Green chillies - 4 finely chopped
  • Cumin seeds - 1/4 tablespoon
  • Pearl onions/Cheriya ulli - 4 finely chopped
  • Mustard seeds - 1/4 tablespoon
  • Curry leaves to garnish
  • Whole Red chilly - 4 broken
  • Salt as needed
How to Prepare:

Step 1: Grind together coconut, green chillies ,pearl onions and cumin seeds . Do not add water while grinding.

Step 2: Cook the kaala channa/ kadala for 4 whistles adding enough salt. Cook all other vegetables for one whistle adding turmeric powder, red chilly powder and salt with 3 cups water.  Mix the kaala channa to it. 
Reduce the water.

Step 3: Add the coconut paste to the cooked vegetables and mix well. Allow it to boil and let the gravy thicken. 

Step 4: Heat oil in a small pan and splutter mustard seeds, red chilly and curry leaves. Add to the gravy and mix well. 

Step 5: Serve hot with boiled rice.
