This is a traditional preparation of Kerala. Very healthy and easy dish to go along with rice or even with chappathy. It is made with the long beans that we get in Indian stores as well as in some selected grocery stores here . I usually get fresh ones from Meijer and it is reasonable as it is available in a big bunch . This one is a tasty dish , not so spicy and also needs very less time for preparation.
Another vegetable Tindora (Ivy guard or kovakka) can also be prepared in the same way. As the ingerdients are the same I have not given separate photos for it. Tindora is also availabe in Indian store, as fresh and also frozen. It is usually slit lengthwise while preparing this dish but if you need a gravy type then you can also cut it in round shapes.
Serves 4
INGREDIENTS:
- Payar- 1lb which is chopped to an inch length.
- OR
- Tindora - 1 cup chopped lengthwise
- Red chilly flakes- 2 tablespoons
- Green chillies- 3 slit lengthwise
- Garlic grated - 1 tablespoon
- Pearl onions (shallots or cheriya ulli) - 1/4 cup sliced thinly
- Curry leaves - to garnish
- Turmeric powder- 1/2 tablespoon
- Coriander powder- 1 tablespoon
- Salt as needed
- Mustard seeds- 1 tablespoon
- Uradh dal (uzhunnu) - 1/4 tablespoon
How to Prepare:
Step 1: Heat oil in a kadai and splutter mustard seeds and uradh dal .Add the red chilly flakes. Add the grated garlic and green chillies . Add the sliced pearl onions and saute till it turns brown.
Step 2: Add the chopped Long beans or the tindora (whichever you are using) and stir well. Add all the powders and salt . Mix well. Sprinkle water and cover it . Cook for about 15 minutes .
Step 3: Serve hot and crispy garnished with curry leaves.
