Vegetable Pulav

This is a simple rice dish made very easily and quickly and also is very presentable to guests .

INGREDIENTS:
  • 2 cups basmati rice
  • 3 cups water
  • 1 cup mixed vegetables- carrots, peas, beans , cauliflower, potatoes.
  • 1 medium onion thinly sliced
  • 2 green chillies
  • 1 tablespoon ginger garlic paste
  • 2 tablespoons , mint and coriander leaves finely chopped
  • Spices- 2 cloves , 2 cardamom, an inch piece of cinnamon
  • 1 tablespoon jeera/cumin seeds
  • 1 tablespoon pulav masala powder
  • Raisins and cashews for garnishing
  • Salt as needed
Serves four

How to Prepare:
Step 1:  Wash and soak Basmati rice in water for 20 minutes. Drain it well and keep aside.

Step 2: Heat butter/ghee in a pan . Add the spices, when it is done add jeera and cook till it changes colour. Add ginger garlic paste and green chillies and saute till done. Add sliced onions and cook till it turns brown. Add the mixed vegetables and saute well. Add salt to taste . Add the rice and mix well. Add the pulav masala and 3 cups water. Mix well and pressure cook for one whistle .

Step 3: Serving
Transfer the cooked rice to the serving dish and garnish with cashews ,raisins, mint and coriander leaves. serve hot with any curry, raitha and pickle.

  1. i used to make pulav without adding ginger garlic paste. i tried ur recipe and liked it.... only thing i didn't add was pulav powder..my pulav tasted different this time.

  2. nice recipe Shilpa.. Tried it and came out very well.. I used the rice cooker.. so did not soak the rice...
