Badam Halwa


This is a delicious Indian sweet delicacy prepared during festive occasions. The authentic recipe needs lot of ghee but here I have used very little or negligible amounts of it. Still the taste of almonds mixed with milk and cardamom powder gives a good flavor. It needs little patience and time but is worth the effort. 


INGREDIENTS:
  •  Almonds (Badam) - 1 cup
  • Milk - 1/4 cup
  • Sugar - 1 cup
  • Cardamom powder - 1/2 tablespoon
  • Ghee - 1 tablespoon
How to Prepare:

Step 1: Soak the almonds in warm water for one hour. Use milk for soaking and the level of milk should be just to the mark of almonds in the vessel. Remove the skin with your fingers and grind it to a smooth paste using the same milk used for soaking. Add the milk little by little to make a smooth paste. Add sugar to it and grind once again .There should not be any bits or pieces in it and it should not be too watery also. 


Step 2: Heat ghee in a non stick pan and add the paste to it. Stir well. Add the cardamom powder and start stirring. Do not add any milk or water after this , but if you need to add sugar you can at any stage. 


Step 3: Stir well till the mixture starts changing  color and becomes thick. 


Step4: Stop stirring when the mixture starts leaving the sides of the pan and had become darker in color. 


Step5: Tranfer it to a plate which is greased with ghee or butter. Lay it out in uniform thickness. When it is cool to touch keep in fridge for 30 minutes. It will become little more harder and you can cut it out into desired shapes and sizes.Serve at room temperature.
