I had been thinking for long to make this dish but somehow did not feel comfortable with the method. Today I just felt some confidence as I found a very simple method to do it and above all it uses less ingredients which is what I look for in all recipes. I found this recipe in another website and tried it altering the measurements a little to suit my taste.

INGREDIENTS:
- White bread- 2 slices
- Milk- 1 cup
- Sugar- 6 tablespoons
- Eggs- 2
- Vanilla extract/ vanilla essence- 1 drop
- Cashews to garnish
How to Prepare:
Step1: Cut the brown ends of the bread slices and soak it in milk for 15 minutes.
Step2: Beat 2 eggs well and add 4 tablespoons sugar to it. Whisk it well for 10 minutes.
Step3: Add the beaten eggs to the blender and give a quick mix for 2 seconds. Add the soaked bread to this mix and blend for 15 seconds. Keep it as such.
Step4: In a nonstick pan, heat 2 tablespoons sugar till it bubbles and then turns brown and is caramelised. Immediately pour this caramelised sugar to the bottom of a steel vessel.
Step5: Keep it undisturbed for 2 minutes till the caramel is set . Then pour the custard mix onto the caramel.
Step6: Steam the steel vessel with the pudding mix for 20 minutes. Insert a toothpick into the cooked pudding, if it comes out clean then we can confirm that the pudding is cooked well. Remove it from the cooker /steamer and allow it to cool for about 20 minutes. Then keep it in the refrigerator for 1-2 hours or till chilled.
Step7: Invert the vessel onto a flat dessert plate . Garnish with cashews . Serve chilled.
