This is a very popular Indian sweet made with semolina (Sooji) . It can also be called Halwa. This is made on most festive occasions . At home my mom also used to prepare it often. After I reached here almost every month for some or the other Indian festive or religious occasion my friends used to make it and give it , so I very seldom makes it at home . The ones they give are real tasty . Here I have also given a try .
Serves about 25-30 pieces
INGREDIENTS:
- Rawa /Semolina/Sooji/Cream of wheat - 1 cup
- Sugar- 1 cup
- Ghee/Butter - 1/2 cup
- Milk - 2.5 cups (You can substitute with the same quantity water also)
- Cashews and Raisins for garnish
- Cardamom powder- 1/2 teaspoon
- Yellow color- a pinch
How to Prepare:
Step1: Heat Ghee/Butter in a flat pan. Roast cashews and Raisins in it and keep it aside.
Step2: Roast Rawa in the same pan till it attains a yellowish to light brown color and a nice aroma comes. Add sugar and mix well. Immediately add milk/water and stir constantly. Add a pinch of yellow color. Stir till the halwa consistency is reached. Switch off the flame.
Step3: Transfer the halwa/kesari to a flat plate greased with ghee/butter lightly. Flatten the mic throughout the plate and leave it to cool. When it is full cooled , cut it into desired shape with a knife. Garnish with raisins and cashews on each piece and serve. It can be stored in fridge .
