Okra-Aloo curry (Ladies finger with potatoes)

 Okra is the common term used for Ladies finger or Bhindi in USA.. Normally I use the frozen ones in the grocery stores here which is usually sticky and is not suited for most of our dry preparations. Rarely we get fresh baby okras, which when I get I am all set to try new combination with it apart from the usual thoran  and coconut milk curry we keralites normally make. So I found in one recipe that it is used in combination with potato and tried it . Its a tasty , easy and good side for rice as well as chappathy. Try it out. 

I am "Dedicating " this recipe to my cute little friend here, Surabhi who simply loves Okras .Most of the days I have seen her come from school and ask for okra curry to go with rice .

INGREDIENTS:
  • Okra - 7 nos.slit lengthwise
  • Green chillies- 3
  • Ginger- an inch piece
  • Garlic -a pod
  • Onion- 1 medium sized finely chopped
  • Potato- 1 medium sized  
  • Mustard seeds - 1/4 teaspoon
  • Turmeric powder- 1/2 tablesoon
  • Coriander powder - 1 tablespoon
  • Salt as needed
  • Curry leaves  or coriander leaves to garnish

How to Prepare:

Step 1: Microwave the potato along with the skin for 4 minutes. Peel the skin off and cut lengthwise.keep aside.Cut the okras and onions lengthwise. Crush green chillies with ginger and garlic . keep aside.

Step2: In a kadai, heat oil a,splutter mustard seeds. Add the crushed paste and saute well. Add the sliced onions and saute till it becomes transparent (no need for browning) . Add the slit okras and saute well till its stickyness leaves. Add the turmeric powder and coriander powder cook with half cup water. Add required salt. when it is almost done add the cooked potatoes and mix well. The gravy should be dry without any water . 

Step3: Garnish with curry leaves or coriander leaves and serve hot with rice or chappathy.
