Gothambu puttu


I have already given the recipe for puttu, using the rice flour. This dish also follows the same method but instead of Rice flour we have to use Wheat flour or our normal chappathy Aatta . There are still lot of varieties of Puttu, few being Rawa puttu, Ragi puttu etc. The fact that it is a steamed food and does not use a drop of oil in any step of making makes it healthy and tasty. 

Serves 2

INGREDIENTS:
  • Wheat flour (aatta) - 3 cups
  • Salt as needed
  • Water to make the dough
  • Grated coconut - 1 cup
  • Puttu kutti- The special cookware to make this.

How to Prepare:

Step 1: Sprinkle little salt over the wheat flour and lightly mix with hands. Sprinkle water little by little and make the four little wet but maintain the powdery texture. The consistency test is the same as for rice puttu, if you make a ball of the flour in your hands, it should stand firm but when you crumble it should turn to smooth powder form immediately. Mix half cup coconut to this powder prepared, and keep it covered with moist cloth for 20 minutes. 

Step 2: Cooking
Boil water in the Puttukudam . Meanwhile start filling the Puttukutti . Layer coconut at the bottom followed by the powder prepared and then again a layer of coconut . Repeat the process till the Puttukutti is filled .Keep the lid on and place it over the Puttukudam. Steam it for 20 minutes. Keep it outside for 5 minutes and then with the end of a long ladle transfer the cooked puttu to a flat plate. It will appear like a sandwich of flour and coconut.

Step 3: Serving
Serve hot with ripe banana or with stew or with a spicy chicken or fish curry.
