This is a tasty dish which can be eaten without any gravy . It is made of rice flour , grated coconut and jeera in a simple and easy way. But you can also make it little more tastier by adding onions, green chilly ,ginger ,coriander leaves etc as shown in the recipe. Both ways its tasty and makes a filling breakfast . Kids will also love it . The main problem with the dish is that it is a little time consuming , tideous and a little messy. But its all worth the effort.

INGREDIENTS:
- Rice flour- 3 cups (I use the Deep brand rice flour available in most Indian grocery stores)
- Salt as needed
- 1 small onion- finely chopped
- 1 green chilly -finely chopped
- 1/2 inch piece ginger- finely chopped
- 1 tablespoon- finely chopped coriander leaves
- 1 tablespoon- cumin seeds (Jeera)
- 1/4 cup- Grated coconut
How to Prepare:
Step 1: Dough making
Take the rice flour in a wide vessel (to make it easy to knead the dough) .Sprinkle little salt over the flour and lightly mix it with your hand.
Boil 4 cups water to a bubbling stage . Pout the water little by little over the rice flour, mixing with a ladle in between. Stop adding water when the flour is uniformly wet with the boiling water and its in a non sticky consistency . (Almost the same consistency as that of Idiyappam dough) . Allow it to cool a little bit, till it reaches a comfortable warmth to knead with your hands. Now add the chopped onions, ginger, green chillies, coriander leaves ,coconut and cumin seeds and knead the dough with your hand. Knead it well for about 10 minutes till it becomes smooth and soft.
Step 2: When the dough becomes smooth , divide it into balls of equal size , (double the size of a chappathy ball) and keep it covered with a moist cloth for 10 minutes.
Step 3: Take a plastic sheet, smear little oil over it and keep one ball on the center of the plastic piece. Flatten the dough ball with your hands and make it into a round shape with uniform thickness all over. Repeat the procedure with the whole dough.
Step 4: cooking
Heat a griddle (I use the iron griddle ) smear little oil over the griddle . Remove the flattened dough from the plastic sheet and transfer it onto the griddle. Sprinkle few drops of oil over it using a paper towel. Cover it with a lid and cook for 5 minutes. Flip the roti to the other side to cook . Cook well till small brown bubbles appear on both sides.
Step5: Serve hot . One popular accompaniment for this dish is ghee and sugar on top which the kids would love. You can have with coconut milk and sugar also . It also goes well with the different stew types like vegetable stew , chicken,mutton ,mushroom stews. It also taste good with spicy chicken curry, kadala curry etc.
