Macaroni Biriyani


This is a variety dish that can prepared easily with your desired ingredients. Usually we prepare pasta referring to Italian recipes or the recipe provided in the pasta packet. My mom used to make a macaroni dish in the Indian Biriyani style and we all used to love it. It is usually on weekends she prepares this dish as dinner and we used to wait for it. Now when I feel like having an Indian style pasta I make this dish following amma's recipe. I have used shrimp in this recipe and to match the shape of it I have used macaroni. Both look good and taste good too. You can substitute shrimp with chicken or vegetables and use the same recipe for variety dishes.



INGREDIENTS:
  • Elbow macaroni - 1 cup
  • Salt as needed
  • Shrimp - 15nos. cleaned 
  • Onion - 1 medium finely chopped
  • Tomato - 1 medium finely chopped
  • Ginger - one inch piece finely chopped
  • Garlic - 4 pods finely chopped
  • Green chillies - 3 finely chopped
  • Mint and coriander leaves- finely chopped - 1/4 cup
  • Cumin seeds (Jeera) - 1 tablespoon
  • Turmeric powder - 1/4 tablespoon
  • Coriander powder - 1 tablespoon
  • Garam masala - 1/4 tablespoon

How to Prepare:

Step 1: Preparing the Macaroni
Boil 6 cups water in a wide bottomed vessel. When it is in bubbling stage add one tablespoon salt and 1/4 tablespoon vegetable/canola oil. Add the macaroni and let it cook for about 5-8 minutes. When it is cooked completely transfer it to a colander and pour cold water to it to stop the cooking process. Allow the water to drain completely keeping in the colander till the masala is done.The pasta would not stick to each other as we have added oil, but if it is still sticking you can drizzle little bit oil and separate it . 



Step 2: Preparing the masala
Crush the ginger,garlic, green chillies,jeera ,mint and coriander leaves. Heat oil in a flat pan, add the chopped onions and saute till it turns brown. Add the crushed masala and saute till the raw smell leaves. Add the chopped tomatoes, saute till it is cooked. Add the salt , turmeric powder and coriander powders, saute till it is mixed well. Add the shrimp and garam masala and 1/4 cup water, mix well. Cover and cook till the shrimp is cooked and gravy is thick. 



Step 3: Biriyani.
When the masala is done and the macaroni is also drained of all water , take a serving dish and add a layer of masala at the bottom, then a macaroni on top of it . Repeat the process till the masala and macaroni are over. Microwave it for 2 minutes. Gently mix with a fork so that masala and macaroni is mixed well. Serve hot .

Shilpa, i had been following yr blog since u started it, bt nvr really tried the recipes. howevr, today i tried yr macaroni biriyani. i had a packet of macaroni lying in my kitchen almirah for a long time, had got it free with something, i think. Instead of the shrimps, i used shredded chicken. it turned out really well. my parents also loved it. thanks a lottttt dearie for sharing the recipe. Great initiative Shilpa, yr presentation is too good.keep on posting new new recipes, nw that i hve started, i'll defntly try them out. :)
