Methi Parathas(Chappathy stuffed with Fenugreek leaves)

Healthy and yummy in one packet- That is  Methi Parathas. I got this recipe from my friend Pooja. She had made crispy methi pooris one evening when we met for tea and chit chat. It was so tasty that I also wanted to try it out. I made the methi parathas instead. Its with the normal Aatta (The chappathy flour) and finely chopped methi leaves. An easy dish to make ,tasty and healthy too. Rarely do we get all three in one go. so here it is ,the magic dish - try it out.

Makes 10 parathas.

INGREDIENTS:
  • Aatta /Chappathy four- 3 cups ( I prefer the Aashirvad or Pillsbury brand more but sometimes I had to be satisfied with Sujata brand also which also worked fine for me) 
  • Salt as needed
  • Methi leaves- 1/4 cup or 1 cube (I use the frozen methi leaves packet you get in Indian store, that works well as it is in cubes and you can easily measure it like that)
  • Few drops of oil to knead the dough along with luke warm water.
How to prepare:

Step 1: Lightly salt the aata and mix well with hands. Sprinkle the methi leaves all over and mix well. Add four drops of oil and mix well again. Now start adding the luke warm water little by little and knead the dough to a smooth ball. 
 Keep it covered with a moist cloth for 30 minutes .This is to allow time for the water to get absorbed in the dough and make it smooth , soft and hence easy to flatten and cook. 

Step2: Make equal gold sized balls of the dough and roll it smoothly into a tight ball.Sprinkle some flour on the counter top or the stand on which to flatten the dough balls. Lightly roll the dough balls in the flour and flatten it to uniform shapes with uniform thickness on all sides. 

Step 3: Heat the griddle. When the flattening of the dough balls are done, cook the parathas one by one by first cooking one side till small brown bubbles appear and then turn to the other side for the same. Transfer the cooked paraths to an airtight container to maintain the freshness. 

Step4: Serve hot with yogurt/curd or your favorite pickle ,sauce or chutney. Enjoy the yummy and healthy dish.
