Vegetable Puffs


This is my favourite evening snack. I have already given a recipe for Egg puffs in my non veg section of the blog. You can follow that for detailed instructions . Here I have given a vegetable puffs recipe using a normal vegetable masala.

I had some guests at home the weekend . Rather than making the masala , stuffing it into the pastry sheets and making in their presence , I prepared the masala and stuffed it inside the sheets one day in advance and freezed it in an airtight container. I baked it the next day without thawing. This idea was given my my friend Sowmya and it turned a success. The baking of it and stuffing is all following the same method as in egg puffs recipe. I have made a slight change in the shape and size. These ones were rectangle shaped and was bite sized. Even my VIP little guest- Georgie , liked it and had two of it which indicates its great success.

Serves 14 mini puffs or 8 large ones


INGREDIENTS: 

For the masala stuffing :-Spicy Podimas (This is almost the same as the Aloo paratha masala , only difference being here I have added some extra veggies like beans and carrot)

  • Potato- 2 large
  • Onion - 1 medium finely chopped
  • Green beans and carrots - one cup-grated
  • Ginger - an inch piece finely grated
  • Garlic- 2 pods finely grated
  • Green chillies- 2 finely chopped
  • Garam masala powder- 1/4 tablespoon
  • Chaat masala- 1/2 tablespoon
  • Turmeric powder - 1/3 tablespoon
  • Red chilly powder - 1/2 tablespoon
  • Cumin seeds- 1/4 tablespoon
  • Salt as needed
  • Coriander leaves- finely chopped - 1/2 cup
For the Puffs :-

  • Puff Pastry sheets - 1 packet
How to Prepare:

Step 1: Microwave the potatoes for 5 minutes along with the skin, When it is cooled to touch remove the skin and grate it . Grate the beans , carrots, ginger and garlic also or finely chop it .

Step 2: Heat oil , add Cumin seeds and allow it to turn brown. Add the finely chopped onions and saute till it turns slightly brown. Add the ginger , garlic and green chillies. Saute till its raw smell leaves. Add the grated vegetables and saute well. Add the masala powders and salt and mix well. Close with lid and allow to cook the vegetables. Add the grated potato and mix well. Cook for another 5 minutes stirring well. Add the chopped coriander and switch off flame.


Making of puffs:

Step 3: Thaw the pastry sheets and flatten using a rolling pin sprinkling maida on top and on the flattening surface. Cut it into desired shape and size. 


Fill in the masala and seal using your fingers and little water. Press with the fork to make an edge design.


Preheat the oven at 350F and bake it for 15-20 minutes or till the surface browns and becomes crispy. (Instructions and details given under Egg puffs recipe) 


Serve hot with tomato sauce.
