Egg biriyani


This is a tasty and a good item for lunch or dinner invite. It  easy to prepare and is a presentable item too. not much accompaniments are needed for this , just a raitha , a pickle or a pappad and your scrumptious meal is ready in minutes.I am trying it for the first time and am just wondering why did I not do this before.

Serves two

INGREDIENTS:
  • Eggs - 2
  • Onion- 2 medium sliced long and thin
  • Tomatoes- 1 - chopped fine
  • Ginger- 2 inch piece- chopped fine
  • Garlic - 5 pods chopped fine
  • Green chillies- 4 chopped fine
  • Coriander leaves- a small bunch chopped fine
  • Mint leaves- a small bunch chopped fine
  • Turmeric powder- 1/2 tablespoon
  • Coriander powder- 1 tablespoon
  • Biriyani masala /garam masala - 1/2 tablespoon
  • Biriyani rice - 1 cup
  • Ghee - 2 tablespoons
  • Cashews and raisins- for garnish

How to Prepare: 

Step 1: Wash the rice and drain off water. Saute it in ghee till its roasted .Cook it adding two cups water, cardamom pods , cinnamon piece and cloves with little salt . 


Step 2: Grind together ginger, garlic, green chillies, coriander leaves and mint leaves.  


Step 3: Boil two eggs and remove shell keep aside.


Step 4:Heat oil in pan, add the sliced onions and saute till it turns transparent. Add the blended paste and saute well. Add the diced tomato and mix well. Add all the masala powders and salt and make the gravy . 


Step 5: When the gravy is done add the cooked rice and mix well. Place the cooked eggs in your preferred way , sliced thin or just halved or as a whole and mix once. Garnish with cashew raisins, fried onions and cilantro .Serve hot with raitha and pappad or with a pickle.
