Tomato rice


Tomato Rice or Thakkali saadham is a very popular dish in South India. It is very easy to prepare and also very healthy and tasty. It can be prepared in variety of ways using your choice of masala powders. The rice used is also according to your choice. Usually Sona massoori or ponni rice is used for making this . But as it was not available in my pantry I used Basmati . Again the final consistency of the dish is a little soggy form usually, but you can also prepare it in normal rice consistency which is also tasty. Some people also use a coconut masala paste to prepare this which is very tasty. But since we usually prepare this dish when we are either running out of time or grocery then a quick and easy method is advisable. So here I have given a very easy way to make tomato rice. I learned this recipe from a Karnataka friend Gayathri. She makes real good tomato rice . 

Serves two

INGREDIENTS:
  • Rice - 1 cup (Washed and drained)
  • Onion- 1 sliced thin and long
  • Tomato - 3 chopped to cubes
  • Ginger garlic paste- 1 tablespoon
  • Mustard seeds- 1 tablespoon
  • Cumin seeds- 1 tablespoon
  • Spices- cardamom , cloves and a cinnamon pice
  • Turmeric powder- 1/4 tablespoon
  • Red chilly powder- 1/2 tablespoon
  • coriander powder- 1 tablespoon
  • Salt as needed
    coriander leaves- chopped finely
How to Prepare:
Step 1: Heat oil in a pressure cooker and splutter mustard seeds. Add the spices and cumin seeds.


Step 2: Saute the onions and ginger garlic paste till is becomes transparent and cooked. 


Step 3: Add the tomatoes , saute well. Add rice and all masala powders with salt.Saute well and add 1.5 cups water. 

Step 4: Pressure cook for one whistle. 


Step 5: Garnish with coriander leaves and serve hot  with raitha, pickle or pappad.
