Vegetable rawa upma


This is a healthy tasty dish which can be prepared very easily. It is usually the first item anyone learns in cooking, so you see its that easy. And there is no tension as to how much masala should be there or whether it is less cooked or overcooked . This is a dish which does not need much of such tensions , the final consistency is also personal preference-you can make it overcooked like kichadi or less cooked in kesari consistency. You can make variations and make this dish with your choice of vegetables and also with shrimp or chicken as you wish.It forms a simple breakfast dish which gets ready in no time, it can also be made as an evening snack or as a light dinner. 

Serves two

INGREDIENTS:
  • Rawa (Sooji) - 1 cup
  • Onion- 1 medium sized -finely chopped
  • Green chillies- 3 finely chopped
  • Ginger- 1 inch piece finely chopped
  • Cashews and Raisins- optional 
  • Mustard seeds- 1 tablespoon
  • Curry leaves- 3
  • Uradh dal - 1 tablespoon
  • Vegetables - beans , carrot, potatoes, green peas etc. which is either boiled with salt and turmeric powder or sauted with masala powders. Your preference. 
  • Salt as needed

How to Prepare:

Step 1: Dry roast rawa till it leaves a good aroma. Keep it aside . Boil 2 cups water and keep aside.


Step 2: Heat oil in a kadai. Splutter mustard seeds and add the uradh dal and curry leaves. Add the cashews and raisins and saute well. (Optional)
Add the chopped ginger and green chillies saute till cooked. 


Step 3: Add the chopped onions and saute till it turns transparent. Add 2 cups boiling water to this and wait till it bubbles.


Step 4:  Add the roasted rawa to this mix and stir well to mix the contents well . 


Step 5: Switch off flame and let it be inside the hot kadai for sometime.Add the boiled vegetables or saute vegetables and stir well. 


Step 6: Serve hot . It is tasty when had without any accompaniments, but the usual combination is upma with banana or with chutney or pickle.
